Macaroni Salad

Quick and Easy Salad, Just throw in your favorite veggies and some pasta, And enjoy !! Perfect for a relaxing and lazy weekend.


  • Mushrooms : 1/2 cup
  • Corn kernels : 1/2 cup
  • Red capsicum : 1 Big (chopped)
  • Pasta : 2 cups (cooked, I used macaroni)
  • Olives : 5-6 chopped
  • Lettuce leaves : A few (chopped roughly)
  • Red onion : 1 small (finely chopped)
  • Italian dressing : 3 tbsp
  • Mayonnaise : 1 tbsp (I used garlic mayo)
  • Extra virgin olive oil : 2 tsp (For glazing)


  • Heat 1tsp of oil in pan, and fry the mushrooms for about 2 min.
  • Take a mixing bowl, and add all the ingredients and toss well.
  • Serve Chilled.

Fresh Veggies Salad

Salads, without which any meal seems incomplete, At least to me. I love making different kinds of salads for my husband, In this way we will be consuming vegetables which otherwise seems a little tough.. Isn’t it 😉

When I was a kid, I hated vegetables. My mom used to make interesting things for me so that I eat it. Later, I realized how essential it is to have vegetables to maintain a healthy body and diet.

So here is a simple salad which I learnt from my brother-in-law who is an awesome cook himself 🙂


Any vegetables ( baby carrots, mushrooms, capsicum(red,yellow,green to give a hint of color) , onion, bean threads, tomatoes.
Tofu (fried)  – 1cup (optional)
Macaroni(boiled) – 1cup (optional)
Corn kernels : 1cup


Take about 1tsp of oil in a pan, and fry the mushrooms for about 4.5min and keep aside.

Dressing : In a bowl, take a little yogurt, olive oil, green chillies and shredded garlic and mix.

Pour the dressing over the vegetables and toss. Adjust the salt and pepper as per your taste. A little quantity of mixed herbs can also be added for an extra zing.

Suggestion : If you don’t like yogurt, even 2tsp of mayonnaise sauce can be added. However yogurt is a healthier option.
