Chicken Lasagne

Dinner Italiano 😛 Hahahaha, My love for italian food is extreme !!! Pizza, Pasta, Canneloni, Lasagna, Just bring it on !!

As usual, It was a busy and a tiring day at work. What to cook for dinner was a major question ? Cooking dinner is always a big challenge for me after coming back from office. Well, I had bookmarked a recipe on lasagne long time back, But never had the time to make it. I thought yesterday was the right day to experiment it 🙂 And it was all sooo easy, It was done in flat 30 min (excluding the baking time) 🙂 And I was happy !! 😀

Here goes the recipe, I altered it accordingly to my taste.


  • Chicken breast : 500 gms (minced)
  • Onion : 2 large
  • Mushroom : about 10 (sliced)
  • Garlic cloves : 4 (finely chopped)
  • Olive oil : 2 tsp
  • Salt to taste
  • Pepper : 1 tbsp
  • Lasagne sheets : 10
  • Pasta sauce (I used readymade one) : 1.5 cup
  • Cheddar cheese : 1 cup (shredded) (i used slices, as that was the one I had)
  • Mozzarella cheese : 1 cup (shredded) (I used slices, as I wanted the cheese to melt on individual portions of lasagne)


  • Boil about 10 cups of water, add a pinch of salt and 1tsp olive oil. Now add the lasagne sheets and cook for 3 min, and drain the water (It should be aldente(half cooked) or else it will break off.
  • Heat oil in a pain, saute the onions till translucent, now add the garlic cloves and saute for 2 min. Mix in the chicken mince, and 1/4 cup of water. Cook till the chicken is half-done, Now add the mushrooms. Cook till done. Mix in the salt and pepper, Adjust the seasoning
  • Preheat oven to 350 degrees F (175 degrees C). To assemble, Grease a baking dish with little olive oil. Spread a layer of pasta sauce and arrange the lasagne sheets, Now spread the chicken and mushroom mixture, Sauce and top it with cheddar cheese.
  • Arrange the remaining lasagne sheets, spread the sauce and top it with mozarella cheese.
  • Bake for 30 minutes in the preheated oven.


Sorry I do not have the picture of the finished product, As we were too hungy and we couldn’t wait to eat it !! 😛

Potato and Pasta Hash Browns


5 medium potatoes, parboiled
1cup macaroni, blanched
3tbsp butter
1 medium onion, chopped
10-12 black peppercorns, coarsely ground
a pinch of nutmeg


Heat 2tbsp of butter in a pan, add onion and saute till translucent.
Preheat the oven to 200 degree C
Mix the potatoes, macaroni and onion together with salt, half tsp of ground peppercorns and nutmeg powder.
Mix well and spread this mixture in a greased baking dish.
Dot with remaining butter and sprinkle with rest of the peppercorns.
Bake for 10-15min, or till the top turns golden brown. Serve hot with Garlic Bread.
