Fruit Custard

“Fruit custard” has always been my favorite since childhood, My mom used to take it often for me. Back there, in India she used to get “Pineapple” flavored custard powder, and it used to taste heavenly, Well I was not able to find that here in UAE, hence I used vanilla flavored, But I stillย long for the pineapple one ๐Ÿ™‚ Well my hunt is on, hopefully I find something here soon.

This weekend, I prepared it for my hubby, as he too is a huge fan of fruit custard. And of course the summers are setting in, so what can be more soothing and comforting than a chilled bowl of fruits custard on a lazy afternoon, Isn’t it ?

So here’s the recipe,

  • Custard powder : 2 heaped tbsp (I used foster clarks)
  • Sugar : 2 tbsp + 1 tsp
  • Milk : 500 ml
  • Mixed fruits of your choice : 3 cups (I used mangoes, strawberry, pears, grapes (seedless) and bananas), avoid citrus fruits

  • Take 2 tbsp of custard powder in a bowl, add about 2 tsp of milk to it and make a thick paste and set aside.
  • Heat the remaining milk with 2 tbsp sugar, Once it starts boiling, Add it to the custard mixture and mix well. I used a whisk for this, to avoid lumps. Let the custard cool down completely to room temperature.
  • Meanwhile, Add about a tsp of sugar to the fruits and set aside for 10 min.
  • Now add the fruits the custard and refrigerate for atleast 2 hrs and Serve chilled.

  1. I prepared the custard according to the instructions on the packet.
  2. Do not add bananas in the custard first, then it turns the custard black. Add it only when you are serving it in individual bowls.
  3. I added a little mango juice(extracted from the seed) to the custard and it tasted well.
