Whole Wheat Eggless Banana Cake

Hello Foodies !! Been sometime since I blogged 😦 Got really caught up with work.. To make up for everything, Here’s presenting whole wheat eggless banana cake 🙂

I baked this over the weekend, As I had some over ripe bananas, And was really thinking what to do with it 😀 Didn’t wanna make buns again. Luckily came across this awesome vegan recipe. And the cake turned out to be super moist and delicious, And hey !! Its also my first bake using wheat flour, Was always scared to use it, thinking how would the outcome be.. But henceforth I think I will bake more using wheat flour as its sooo very delicious !! I can finish off this whole loaf of cake alone 😉 And It needs just the basic ingredients from your kitchen.. 🙂 So go on and give it a try 🙂

Recipe Credits : Veg Recipes Of India

  • 3 large over ripe bananas
  • 1.5 cups whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • a pinch of salt
  • ½ cup organic unrefined cane sugar or regular sugar
  • ⅔ cup any neutral flavored oil (I used canola oil)
  • 1 tsp vanilla extract
  • Preheat your oven at 180 degrees C/350 degrees F.
  • Peel and mash the bananas until smooth, add sugar, oil and vanilla extract.
  • Stir very well so that the oil mixes with the banana puree and the sugar dissolves.
  • Sieve whole wheat flour, baking soda, baking powder, salt directly in the bowl. you can also sieve these separately and then add them to the wet ingredients.
  • Fold the dry ingredients into the wet ingredients very well.
  • Pour the batter in a greased or lined loaf pan
  • Bake in the preheated oven at 180 degrees C/350 degrees F for 45 to 50 mins or till tooth pick inserted in the cake comes out clean.
  • When warm or cooled, slice and serve banana cake plain with tea or coffee.
