“Rogan Josh” is a type of a rich mutton curry, with mild spices !! Hubby and I are great lovers of mutton, and I make it a point to prepare this for him once in a while (Taking in consideration the fat and cholesterol issues :P)

This is my way of making “Rogan Josh”, been following this recipe since quite sometime and it has never failed me. šŸ™‚ Hope you guys like it too šŸ˜‰

IngredientsĀ 

  • Mutton : 1kg
  • Onions : 4 (Finely chopped)
  • Garlic – 8 cloves
  • Ginger – 1 inch piece
  • Green chillies – 6 (finely chopped)
  • Cardamom – 4
  • Cinnamon – 1/2 inch stick
  • Cloves – 4
  • Star anise – 1
  • Bay leaf – 1
  • Peppercorns – 10
  • Oil – 2 tbsp
  • Ghee – 1tbsp
  • Coriander leaves – for garnish
  • Salt to taste

Marinade

  • Paprika – 1 tbsp
  • Coriander powder – 1tsp
  • Cumin powderĀ – 2 tsp
  • Yoghurt – 1 cup
  • Pepper powder – 2 tsp

Method

  • Make a thick pasteĀ of the ingredients mentioned under “marinade”. Now add mutton to this and let is marinate for about 2 hrs.
  • Make a paste of ginger and garlic with 4 tbsp of waterĀ in a blender, until it is smooth
  • Heat oil in cooker, Add the bay leaf, cloves, cinnamon, star anise and peppercorns and saute till fragrant. Next add the chopped onions and fry till its golden brown.
  • Now, add the chopped green chillies and the ginger garlic paste and saute for another 3 min,
  • Now add the marinated mutton and saute well for around 5 min, Now add about 1 cup of water and pressure cook for 7 whistles (Mine was done in 7 whistles).
  • Let the cooker cool down on its own, Now adjust the salt. Heat 1 tbsp of ghee in a tempering pan, and add it to the curry. Garnish with coriander leaves, and serve hot with roti or steamed rice.
