Date and Banana Cake

on December 19, 2012

I first had banana cake in Thai airways, 3yrs back when I had been on a vacation to Thailand with my parents. It had been served as breakfast with a glass of orange juice. Tasted simply divine.

This recipe is a combination of dates and very ripe bananas. Am sure you all will love it too 🙂

Butter : 1/2cup
Sugar : 3/4cup
Eggs : 2
Banana : 1 large, mashed.
Plain flour : 3/4cup
Baking powder : 1/2tsp
Soda bicarbonate : 1/2tsp
Sliced almonds : 1/4cup
Vanilla Essence : 1/2tsp
Milk : 2tbsp
Chopped, seedless dates : 1/2cup

  • Preheat the oven to 180deg/Gas mark 4. Line a cake tin with grease proof paper
  • Cream the butter and sugar, add eggs, one at a time then stir in the mashed banana. Sift the flour with baking powder and soda bicarbonate. Fold the flour, almonds, vanilla essence, milk into creamed mixture
  • Spoon half the batter into the tin, spread sliced dates evenly over it. Then spread the other half of the batter over. Bake in the preheated oven for 40min
  • Cool and remove from tin
