Basic Vanilla Sponge Cake

Ingredients

Plain flour, sieved : 85gms
Baking powder : 3/4tsp
Eggs : 3 large
Powdered sugar : 115gms
Hot water : 2tbsp
Melted butter : 4tbsp

Method

  • Preheat the oven to 200deg/Gas mark 6, Grease and dust a cake tin with flour
  • Sift together the flour and baking powder in a bowl. In another bowl, beat eggs and sugar till light and fluffy. Fold in the flour mixture in the beaten eggs, little at a time
  • Pour the mixture into the cake tin and bake in the preheated oven for 15min or until the cake is golden in color and leaves sides of the tin
  • Remove from oven and cool for 2-3min before turning out the cake
